We've illustrated this naturally processed Caturra and Catuai from Finca Santa Teresa with Dave Larson of Embassy East. We found the cup presented prominent sweet notes of rum and raisin, bourbon and Manuka honey whilst framed by refreshingly bright tropical fruit and pineapple acidity.
Toby Smith (Toby's Estate Founder) and business partner Andre Wierzbicki acquired Finca Santa Teresa from the local Berard family in 2012 and gained immediate success with a 3rd and 4th place in their first year competing in The Best of Panama Competition. In 2016 FST took both 5th and 8th in the same competition.
Today the farm employs 30 permanent workers and about 80 seasonal pickers. There's also a school with two teachers for children up to the age of 12, and a bus service from the farm to town for older students.
